To choose the best eggs:
– Look for eggs with intact shells, free from cracks or leaks.
– Check the expiration date to ensure freshness.
– If possible, choose eggs from organic, free-range, or pasture-raised sources for better flavor and quality.
To make fluffy omelettes:
– Crack the eggs into a bowl and whisk them briskly until the yolks and whites are well combined.
– For extra fluffiness, add a splash of milk or cream to the whisked eggs and season with salt and pepper.
– Preheat a non-stick skillet over medium heat and add a pat of butter or a drizzle of oil.
– Pour the beaten eggs into the skillet and let them cook undisturbed for a minute or two until the edges start to set.
– Gently lift the edges of the omelette with a spatula and tilt the skillet to allow the uncooked eggs to flow underneath.
– Continue cooking until the omelette is mostly set but still slightly runny on top.
– Add any desired fillings (cheese, vegetables, cooked meats) to one half of the omelette and fold the other half over.
– Cook for an additional 30 seconds to melt the cheese and finish cooking the omelette.
– Slide the omelette onto a plate and serve immediately.
