Here’s a simple recipe for making potato salad: 

Ingredients:

– 2 pounds of potatoes (Yukon Gold or red potatoes work well)

– 1/2 cup mayonnaise

– 2 tablespoons Dijon mustard

– 1/4 cup finely chopped red onion

– 2 celery stalks, finely chopped

– 2 tablespoons chopped fresh parsley

– Salt and black pepper to taste

Instructions:

1. Wash the potatoes and cut them into bite-sized cubes. Place them in a large pot, cover with water, and bring to a boil. Cook until tender but still firm, about 10-15 minutes.
2. Drain the cooked potatoes and let them cool completely.
